By default, your service keeps the signed result (one of three statuses) and never receives the image, an estimated age, or a biometric score. If it enables estimated age visibility, it can access the estimate only for sessions whose shoppers accepted the visibility disclosure. The estimate is stored only for those consented sessions and is deleted when its session record is deleted; session records currently have no fixed automatic deletion period.
